Pili Nut Crusted Chicken Nuggets

In Pili Hunters most recent Recipe Contest we asked our followers to get creative with our buttery nuts and create a mouth watering recipe... Eliza of @keto_simplefood did just that! These delicious Pili Nut Crusted Chicken Nuggets have an easy to follow recipe and are a great way to get a protein packed meal.

Pili Nut Crusted Chicken Nuggets  

Makes 6 Chicken Tenders
(Low Carb, Keto Friendly, Dairy Free)
Ingredients:
  • 1 chicken breast
  • Pili Nuts (I used turmeric and black pepper flavor)
  • 1 egg
  • Salt 
  • Nutritional yeast
  • Seasoning of your choice (optional)
  • Olive oil for frying
Instructions:
In a blender, grind up some pili nuts until you get a flour-like consistency. Transfer to a plate and add some nutritional yeast. The ratio of nuts to nutritional yeast can be 50/50 or you can modify it to your liking. Add some additional seasoning if you like. Set the mixture aside. 
 
Next, cut the chicken lengthwise (chicken tender like shape ) and season it with some salt and pepper. In a bowl, crack open the egg and beat it well. Use a fork to grab a chicken piece and dip the chicken in the egg mixture and coat it with pili nuts and nutritional yeast crust. Make sure the chicken is well coated. 
 
Heat a pan with some olive oil and fry the tenders. Cook it for 10 min over a medium flame with the lid on. Repeat on the other side. Keep a watchful eye on the tenders, you don't want them to burn. Once the tenders are ready, enjoy it with some dipping sauce. I had mine with homemade spicy chipotle mayo.
