ALISON'S NY KETO BAGELS WITH PILI HUNTER'S PLAIN PILI NUTS

INGREDIENTS:

12 oz. (1 1/4 cups) mozzarella, chunked
2 oz. cream or goat cheese
1 1/4 c. plain pili nuts
2 tbsp. egg white protein powder (or 1/4 c. more pili nuts)
1 tbsp. baking powder
Everything Bagel Spice (see note below)

RECIPE:

In a double boiler over medium heat, melt 12 ounces (1 1/4 cups) of chunks of mozzarella and 2 ounces of cream cheese or goat cheese. While this is melting, stir often, but prepare the rest below: 

Grind 1 1/4 cups of pili nuts in the food processor until it looks like a course flour (see note below as you might need more nuts). Add to flour - 2 tablespoons egg white protein powder (or 1/4 cup more of pili nuts), one tablespoon of baking powder and blend in food processor. Add melted cheese to the pili nut mixture in the food processor and pulse until combined. Put the food processor in the freezer for a few minutes.

Line a cookie sheet with parchment paper. Preheat oven to 400 F.

Remove the dough from the food processor - divide into four equal pieces. Roll each piece into a log about 5 inches long. Sprinkle the log with “Everything Bagel” spice, and roll until it is stuck on all sides of the log. Make the log into a circle (bagel) and place on the parchment paper. Repeat with other three pieces.

Bake for about 15 minutes or until golden brown (I find that the bottoms tend to burn so bake just above the middle of the oven). Cool before serving.

To serve: Split in half and toast in a skillet with 3 tablespoons of butter to bring the fats up. Then top it with goat cheese (lower in IGF-1) or cream cheese. Store in fridge in paper bag that is then wrapped in a plastic bag. 

You can buy “everything bagel spice” in stores, but it's not always organic. I make my own with equal parts of white sesame seeds, black sesame seeds, poppy seeds, garlic flakes, onion flakes, and salt flakes.


**You can make this with almond flour, but it does not keep me in ketosis. Check your ketones 4-6 hours after eating, and the next day!
