Cacao is an emerging crop in the Philippines, and we are proud to contribute to the country’s economy by encouraging the growth of this new sector. As with our other ingredients, all of our cacao is sourced from organic farms in the area of our processing location. By buying from organic farms in this growing sector, we hope to push the direction of the cacao industry in the Philippines towards natural production, and increase the environmental sustainability of the nation’s agriculture.
All of our pili nuts are wild harvested by hand from the Filipino rainforest, placing minimal strain on natural resources and providing local communities with an incentive to preserve the health of their wild spaces. After harvest, the nuts are then sprouted and activated through a soak in salt water and dehydration. The activation process breaks down the phytic acid and enzyme inhibitors contained within raw pili nuts, allowing the body to access the nutrients inside much more easily. The result is a super-nut with a rich buttery taste, containing a huge range of essential vitamins and minerals such as magnesium, manganese, and Vitamin B1, and the highest fat and lowest carbohydrate content of any nut. This compact nutrition and delicious flavor makes the pili nut a great take-along snack for long adventures as well as healthy staple in any balanced diet.
To ensure freshness we recommend storing your Pili nuts in the refrigerator. While some love the crunchy texture of cold Pili's we recommend eating them at room temperature.
