            We just received a fantastic new recipe from Chef Whitney C. Aronoff. Whitney is a natural foods chef out of Southern California who specializes in preparing healthy and local meals. Recently she came up with this innovative recipe for Cauliflower Couscous that is Keto, Whole 30, Paleo, Gluten Free, Soy Free, and Vegan. We were thrilled to see that Pili nuts could be used in such a unique dish. We never would have thought of it, but we’re glad that she did, because pili nuts in Cauliflower Couscous look exquisite.



Golden Cauliflower Couscous


Recipe by Chef Whitney Aronoff
Prep time: 10 minutes
Cook time: 6 minutes
Serves: 4

Ingredients:

1 medium head of cauliflower
2 T extra virgin olive oil
3 cloves of garlic, minced
1 tsp ground cumin
¼ tsp turmeric
Zest and juice of 1 lemon
1 tsp of sea salt, or more to taste
½ tsp black pepper, or more to taste
1/4 c small diced red onion
1 Fresno chile, seeds removed and minced
8 Greek olive, pitted and sliced in half
6-8 dried pieces of fruit, finely chopped (such as apricots, dates or prunes)
½ small cucumber, medium diced
½ orange bell pepper, medium diced
½ c Pili nuts
1 small bunch of fresh mint, chopped
1 small bunch of fresh cilantro, chopped
1 small bunch of fresh flat leaf parsley, chopped

Instructions:

Wash cauliflower, remove the core and stems, and separate the florets. In two batches, pulse the cauliflower in a food processor until the granules are the size of couscous.
Heat the oil in a large sauté pan over medium heat. Add the garlic and cook for about 1 minute, then stir in the cumin and turmeric, stirring for less then a minute (until aromatic). Add the cauliflower and cook, stirring occasionally, for 5 minutes or until al dente. Transfer the cauliflower to a serving bowl and let cool.
Stir in the lemon zest, juice, salt, and pepper. Then stir in the onion, chile, olives, dried fruit, cucumber, bell pepper and nuts. Stir in the mint, cilantro,  and parsley, and taste. Add additional salt, pepper and lemon to taste.
Let sit for 30 minutes so flavors can marinate before serving. Dish can be served cold or at room temperature
