Salted Caramel Pili Nuts (Sugar Free)

Oscar, a recovering carboholic (his words) and diabetic, from Canada, has found that following the keto diet has played a major part in reversing his diabetes. He has a food blog and social accounts under the name I Hacked Diabetes, that work to share the good news and the awesome keto inspired recipes he creates!

Pili Hunters was lucky enough to be featured in I Hacked Diabetes most recent recipe, Salted Caramel Pili Nuts! Let us just say they look absolutely delicious and we can't wait to get home tonight to try them out ourselves!

Salted Caramel Pili Nuts

  • 1/2 Cup Pili Nuts - Coconut Oil/Himalayan Salt
  • 1 tbsp - Coconut Oil
  • 1 tbsp - Erythritol
  • 1/2 tsp - Vanilla
  • 2 tbsp - Sugar Free Salted Caramel Syrup


In a medium pan melt down the coconut oil, then drop in the erythritol, vanilla and salted caramel syrup.  Toss in the pili nuts and let simmer on medium/high, stirring occasionally until caramelized.

Strain if needed and then place on a parchment lined baking pan. -
Let cool, then break apart the pieces or not, could eat them as clusters or a brittle.
