- 2 cups shredded coconut
- 1 tbsp coconut oil
- 1/4 cup pili nuts
- 2 tsp vanilla
- 1 tsp coconut sugar
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 2 tbsp chopped pili nuts (topping)
- 2 tbsp raw cacao nibs (topping)
- Place shredded coconut and coconut oil in food processor and process continuously until you hear an audible change in the food processor. Stop and scrape the sides down. Cover and continue to process, stopping and restarting to scrape the sides down until it turns into a smooth coconut butter.
- Once coconut butter has formed, add remaining ingredients (except for toppings). Process until combined.
- Line a mini muffin tin with parchment liners and add a small spoonful of mixture into each liner to make 12 cups.
- Sprinkle on pili nuts and cacao nibs. Freeze for 30 minutes.
